In this Naturally Colorado Education Event, we will explore what the changing meat category and growing plant-based alternatives can tell us about the future of food and consumer demand. This session will also dive into how companies and leaders have navigated the disruption and what they have learned to prepare for the future—so come prepared to learn as much about leadership and resiliency as about the future of meat and protein consumption and choices.

Dave Carter
Dave Carter serves as Executive Director of the 1,200-member National Bison Association, where he works to strengthen the production and marketing systems for North American bison. Dave was a leader in the six-year campaign that resulted in bison being designated as the National Mammal of the United States. He is now coordinating the effort to restore one million bison to North America. In 2014, U.S. Agriculture Secretary Tom Vilsack appointed Dave to the USDA Agricultural Trade Advisory Committee for Livestock and Livestock Products. He was reappointed to the committee by Agriculture Secretary Sonny Perdue last year.
As the principal of Crystal Springs Consulting, Inc., Dave works extensively on issues relating to organic farming, natural food, and regenerative agriculture. He helped gain regulatory approval in 2013 for Non-GMO labeling of meat, poultry and dairy products sourced from animals fed diets without genetically modified ingredients. In 2003, he co-founded Pet Promise, a groundbreaking pet food brand that pioneered dedicated, transparent supply arrangements with family farmers to source ingredients from animals raised without growth hormones or antibiotics. He is currently assisting two tribal nations in developing and implementing food sovereignty initiatives.
Dave is also one of the founders and volunteer managers of the Broomfield Farmers’ Market, which is now in its 10th season. The Broomfield Farmers’ Market has twice been recognized as Colorado’s Favorite Farmers’ Market by the American Farmland Trust. He has a long history in sustainable and regenerative agriculture, having served as the Chair of the USDA National Organic Standards Board from 2001-2003. Dave and his wife, Sue, are partners in a bison herd holistically managed on a 7,800-acre ranch owned by the Savory Institute in eastern Colorado.
Tyler Huggins
Dr. Tyler Huggins is an environmentalist, scientist, and entrepreneur. Huggins is Co-Founder and CEO of Meati Foods, an innovative food company focused on using proprietary, clean technologies to provide nutrient-dense, fungi-based meat. Huggins is passionate about the application of technologies to facilitate sustainable human development. He firmly believes that clean technologies can be both economically and environmentally advantageous. Huggins received a PhD in environmental engineering and worked on highly selective programs within the Department of Energy (DOE).
Mike Murray
Mike Murray is a 20 year CPG veteran with a passion for leading mission-driven food brands to the ethical definition of success. After 10 years successfully growing iconic brands like Betty Crocker, Nature Valley and LARABAR at General Mills, he transitioned to the natural side of the industry to lead So Delicious Dairy Free (SDDF) from $54 to $195 MM in 3 years. Having driven the successful SDDF exit and integration into WhiteWave Foods, Mike was recruited to leverage his proven leadership, team-building, innovation strategy and brand-building skills as CEO of high-growth free-from snacking brand free2b Foods. Now, as CEO of Teton Waters Ranch, Mike and team are working diligently against their mission to create a more regenerative, humane, healthy food system for all. Mike earned his MBA at UCLA, and lives in the Front Range with his wife, Sunshine, and three sons Sean, Kyle, and Connor. They love enjoying the CO outdoors together, from team sports to hiking, biking and skiing.
Loree Mulay Weisman
Loree Mulay Weisman is Mulay’s Sausage Corporation’s accomplished Founding President and CEO. Heading up this WBENC Certified Woman-Owned Business, her expertise lies in sales, marketing, R&D, strategic planning and development. She is the corporate visionary opening new channels and exploring growth opportunities for the company. Loree has grown Mulay’s with a critical eye for quality, leading the competition with innovation and certifications, always ahead of trends, guiding with a tradition of excellence for over 30 years.
What started in 1990 as an annual sausage stand to supplement ski bum incomes in Crested Butte, Colorado, Mulay’s Sausage has grown into a vibrant company with retail distribution and sales in over 40 states throughout the western US. Carlotta Mast is the Senior Vice President of Content and Insights for Informa’s Global Health & Nutrition Network, which includes Boulder’s New Hope Network. Carlotta is a frequent speaker at industry events and conferences and has been interviewed about natural products industry trends and market performance by The New York Times, NPR, ABC News, BusinessWeek and numerous other media outlets. In addition to serving on the Board of Directors of Naturally Colorado, Carlotta sits on the board of the Climate Collaborative, whose mission is to leverage the power of the natural products industry to reverse climate change. In 2013, Carlotta co-founded a paleo snack company called Wholly Bites, which hit the market well before Whole Foods Market and other retailers began adding paleo sections to their stores. Wholly Bites was sold in 2016 and is now marketed under the Thrive Tribe brand. Fun fact: A fourth generation Colorado native, Carlotta’s great grandparents emigrated from Sweden to Boulder in 1876.
